• 2 ½ C white flour
  • 2 ½ tsp baking powder
  • 2 tsp thyme (dried)
  • 1 tsp mustard powder
  • 100g cheese, grated
  • 125g butter, melted
  • 1 C milk
  • 2 eggs
  • 100g bacon, diced
  • 1 small onion, diced
  • 1 tsp oil (for frying)
  • extra grated cheese for topping


Preheat oven to 200C

Fry the onion and bacon in a pan with the oil, until cooked.

Mix together the dry ingredients, along with the grated cheese.

Melt the butter in the microwave, and stir in the milk and eggs.

Add the wet ingredients to the dry, along with the cooked onion and bacon. Stir until mixed through. Spoon into greased muffin tins and bake for 20-25 minutes, or until a skewer comes out clean when pressed through the centre of a muffin.
