Ingredients

  • 5-6 lemons
  • 1.3kg sugar
  • 1.9 L water
  • 2 Tbsp citric acid
  • rind of 2 lemons

Method

Squeeze the juice of the lemons into a pot. Add the sugar, cold water, citric acid and grated lemon rind to the pot. Bring the pot to a boil and reduce to a gentle simmer until the sugar has dissolved in the water. Set aside to cool.

Sterilise some glass bottles with screw top lids.

Once the concentrate has cooled completely pour this into the glass bottles and store in the refrigerator.

Anytime you want a cool refreshing lemon drink pour about 1-2 cms of the concentrate into a glass and top with cold water or soda water.
